There are those time when you just want something easy, ready to eat, and filling, but not heavy. There are other times you want something sweet that feels decadent, but is actually good for you.

This is it!

It might feel like an unusual pairing, but avocado, dates and berries work REALLY well together. You can whip this up and keep a few jars handy in the fridge for breakfast, snack time, or dessert. Change up the fruit you add in and you've got endless options for healthy yumminess!

Your base is a blend of avocado and dates. To make it easy, soak your dates for a few hours or overnight. Toss them in the blender or food processor with the avocado for a bit of natural sweetness. You can add in Cardamom, Cinnamon, Nutmeg or any spice (or essential oil) you like here, too!

The next layer is optional, but so tasty. I like to add in yogurt, but you can totally dessert-it-up by making this a coconut cream, whipped cream, even mascarpone. You can add in all kinds of goodness here, too. I added some ground flax seed, but nuts, coconut flakes, dried fruit, shaved chocolate, would work as well.

The last layer is the same base of avocado + date + fruit of your choice. This go round we happened to have strawberries in the house, but I love this with blackberries, blueberries, raspberries, even peaches, pear or mango. Then top as you like! I threw on some hemp seeds. 

Fruit Mousse Swirls

Ingredients
2 avocados
2-3 limes
6-8 dates (pitted)
1 cup berries (fresh or frozen, but thawed)
Pinch of Cardamom, Ginger, or Cinnamon to taste (or 1 drop of essential oil)
Yogurt, Coconut Cream or Mascarpone

Toppings/add-ins
Peanut, Almond or Sunflower butter
Hemp seeds
Flax seed
Nuts
Dark chocolate
Flakes coconut


Method
  • Soak your dates for a few hours in boiling water or over night to get them nice and soft
  • Cut avocados in half and remove the pit. Scoop out the flesh into your blender or food processor. Add in dates and the juice of your limes. Blend until smooth, adding a bit of water as needed
  • Fill half of your jars with the avo+date+lime mixture and reserve the rest in the food processor. Add berries and blend until creamy. Add in any spice or essential oil you like
  • Layer your jars by adding the yogurt (coconut cream or mascarpone), a bit of topping/add-in, then a layer of the avo+date+lime+berry mixture
  • Top with whatever floats your boat! I love almond butter here

You can store your jars for a day or two in the fridge, so this is a great grab-n-go breakfast.
